Home-made vegetable salad

home-made vegetable salad
This happy dish was served last New Year’s Eve. Hubby and I were so tired of all the meat we had during the holidays that we thought of somehow detoxifying. And for Ayex’s birthday celebration last January 9, I made a batch for the adults. I was so surprised that it was a hit!

What we used

  • 2 packs Chinese lettuce (We brought ours from SM Hypermartket)
  • 1 can of Corn kernel
  • 1/4kg grapes, cut into halves
  • 1 pack of soup and salad croutons
  • 2 pieces mangoes, cut into cubes
  • mayonnaise
  • ketchup
  • sugar

How to make the salad

You basically have everything already and all you have to do is just arrange them to make them presentable. I used a square serving dish (I have this thing with serving dish). In that plate, I arranged the lettuce first, then I added the corn kernels, cubed mangoes, grapes and croutons one after the other. And voila – you have a healthy, delicious and inexpensive salad!

As for the dressing, I asked hubby to make one since he didn’t want to opt for the ready-made thousand island dressing. He used the mayonnaise, ketchup and sugar to make his own dressing. Unfortunately, I didn’t get the exact measurements he used so I take it as a trial and error.

Other ingredients you may want to add to your salad are:

  • tomatoes, cut in circles
  • bacon bits
  • hard-boiled eggs, cut in circles

Buttered Baby Potatoes with Crispy Bacon
This is one potato recipe that is both easy to prepare and always a winner in our house hold. We can eat it as it is and nothing else.

What you need:

  • 2 packs of Baby Potatoes (that’s how we buy it from the grocery)
  • 1/4 butter
  • 5-6 cloves of garlic, finely chopped
  • 7 bacon strips cut into tiny yet visible pieces

How to do this recipe:

Boil the potatoes with skin until they’re almost cooked. Use a fork to occasionally check the potatoes if they’re already easily breakable. Make sure not to over cook. Once cooked, drain the water.

Heat a separate pan and melt there the butter. Once the butter has melted, cook the bacon until crispy. Add the garlic. Once the garlic is cooked, put the baby potatoes. Mix well to make sure each potato is covered with butter.

Serve at once.

PS: Pardon some of the terms. I know I should improve in my cooking language.

This is the second way I used the Malunggay Pesto sauce I made.

Spaghetti in Malunggay Pesto Sauce with Tuna

What you’ll need:

  • 1/8kg Spaghetti cooked al dente
  • 1-2 cups Malunggay Pesto sauce
  • 1 can Hot and Spicy Century Tuna
  • 3tbs Grated Parmesan Cheese

The procedure:

While your cooked pasta still still hot, pour it in a bowl then add the Malunggay Pesto sauce until all strands are covered with the sauce. Add the tuna, do not throw the oil of the tuna yet. If you want, you can make the tuna slices smaller. Add the cheese and mix well. If your pasta looks dry like the above because of the Parmesan cheese, add more oil from the can of tuna. Serve with crackers or toasted bread.
